Last weekend I noticed that I had a bunch of veggies that were going to go bad in my fridge. Sooooo I stole borrowed Josh's crock pot and attempted my first soup.

It was a hit! Scroll down for the recipe. But you can put anything in it you want!

The entire contents of my fridge... went into the pot!

Be liberal with your S&P people!

Refrigerator Soup

  • Kitchen sink soup
  • mushrooms
  • kale
  • half head cabbage
  • 10 oz cubed butter nut squash
  • 32oz chicken broth
  • 1 and a quarter onions
  • 2 cups carrots
  • can diced tomatoes
  • can black beans
  • small can corn
  • shallots
  • sage
  • squash seeds
  • 1 zucchini
  • a few gold potatoes diced
  • leftover chicken carcass

  1. 1. Chop everything up and put it in the crock pot.
  2. 2. Sprinkle VERY liberally with salt and pepper.
  3. 3. Add the chicken broth and then add enough water to fill your pot (this may vary depending on how many veggies you have but I promise it will be flavorful! I added two pots of water!)
  4. 4. Cover and cook in your crock pot on high for 4.5 hours.
  5. 5. Taste test and add more seasoning if necessary.
When I sat down to enjoy it, I was very pleasantly surprised. It was delish! And I've had leftovers every day and still have some frozen too!

Also, Josh had rented me a fancy camera to use. So I took a thousand pictures! It was so fun to play with it and now I really want a DSLR! #wishlist
