Three things to tell you this Monday morning:

1. I made a totally random and totally delicious chicken with some ingredients left in my fridge. (see recipe below)

2. I love spring and I love my family and I love baseball. So I obviously love watching my cousin play baseball outside with my family in the sun. (see hilarious family pictures below)

3. I'm two weeks into Best Body Bootcamp. (see my recap below)

Spicy Chicken with Spinach

  • 1 tbsp olive oil
  • 3 cups spinach
  • 3/4 cup salsa
  • Salt
  • Pepper
  • 1 large chicken breast
  • 1/2 cup mushrooms

  1. Preheat the oven to 350 degrees. 
  2. Pour olive oil in bottom of pan
  3. Add spinach, salt, pepper, mushrooms, and place chicken breast on top.
  4. Pour the salsa (spicy if you like it) on top of the chicken. 
  5. Bake for 35 minutes stirring everything around after 15 minutes. 

On Saturday, Mom and I went with my cousin Liam, Grandpa and Uncle Steve to watch my cousin Ethan play baseball. Ethan is a pitcher on his high school team and it was so fun to go out and support him. He even let me take a few pictures and didn't laugh when I cheered in my man voice. My brother used to hate that! haha.

Uncle Steve was not as pleased about taking pictures. :)

And here's Ethan! Number 4 and looking good! He had several great pitches and it was so fun to see him play. This makes me feel old but I remember when he was born. He was the cutest little baby. And now he's on the pitcher's mound!

As far as bootcamp goes, it's been going pretty well. I really like that Tina has us make goals and that we can earn prizes if we keep up with each goal. It's really helped me keep to my plan for healthy living. I will say, that my 'cheat days' have been a bit excessive. I need to get those in check!

Overall though, I highly recommend the program!
